What tonka bean actually is

The tonka bean is the seed of the cumaru tree, which grows in the forests of northern South America. Fresh from the fruit, the seed is plain. Once it is dried and cured, it turns black and wrinkled, and a fine frost of fragrant crystals can appear on its skin. That frost is coumarin, the molecule responsible for most of the smell.

Coumarin was one of the first aroma materials chemists learned to make in a lab, and it changed perfumery for good. Today a perfumer can use natural tonka absolute, synthetic coumarin, or a blend of both. When a note list says "tonka bean", it can mean any of those. What does tonka bean smell like?

Tonka smells like vanilla that has been left in the sun next to a bale of hay. There is the creamy sweetness you expect from vanilla, but it is drier and a little nutty, with a toasted almond edge and a faint bitterness that keeps it from tipping into dessert. Some people also pick up tobacco, caramel or a soft powdery feel, depending on what the perfumer puts around it.
