Gypsy Water by Byredo came out in 2008 and is sold as a unisex scent. Byredo's own page and the catalogue give the same three layers. The top is bergamot, lemon, pepper and juniper berries: zesty, a little sharp. The heart turns to incense, pine needles and orris, which gives the scent its resinous, outdoor mood. The base is soft: amber, vanilla and sandalwood.

Gypsy Water Absolu arrived in 2026 from the same perfumer, Jérôme Epinette. It keeps bergamot and pine needles on top, names black pepper outright, and moves the base to Ambroxan and vanilla, a deeper finish.
